What does “Raised Between Worlds” mean?

It is our shorthand for the meeting point behind the brand: highlands and valleys, old-world caviar and a new landscape, serious craft and a little humor. SirGeon's is not trying to imitate anyone else. We are building a new one from a place of confluence.

Why western Sichuan?

Because this region is more than a backdrop. It is a passage: water moves through it, cultures have intertwined across it, and our sturgeon are raised within those conditions. Perhaps that is why their story feels familiar to us. The fish came from elsewhere. The water gave them a home.

What does SirGeon's Caviar taste like?

Clean and creamy, with a finish that keeps going after you've swallowed. Pure malossol means using only as much salt as needed to preserve the roe, allowing the character of the eggs and the water they were raised in to come through. Texture is also an important point: the beads are tender and give way.

At SirGeon's, our caviar is free from preservatives and any additives. It is simply high-quality sturgeon roe, naturally rich in protein and fat, with omega-3 fatty acids and vitamin B12.

Are non-Chinese caviars higher quality?

No. The most exclusive brands source from China, and the best restaurants serve it every night. The industry's open secret is that the origin just doesn't make it onto the label.

Ours does. A single farm in western Sichuan, on rivers fed by snowmelt off the Tibetan plateau, where the water crosses stone and forest before it reaches the fish. It runs through the farm and back out again at the same volume, filtered on the way. Sustainable in the plain sense, which is that the river is no worse off for us being on it.

Ten years before the first tin, and fair wages for the people who do that work.

How long does it keep, and where?

When stored unopened at 28–32°F, it will keep for up to three weeks. If kept below 38°F, enjoy it within 7–10 days. Once opened, keep it chilled and consume within three days.

Can I freeze it? What if I don't finish it?

Best not to freeze it. Ice crystals rupture the beads, and the texture doesn't come back. If there's some left, press a piece of cling film flat onto the surface so no air sits on top, put the lid back on, and finish it within two days.

How do I check the status of my order?

We'll email you a tracking link as soon as your order is handed to the carrier. That's usually the day before it lands. It's also under Your orders if you made an account.

Where do you ship?

Anywhere in the contiguous United States. We'd love to reach Alaska, Hawaii and Puerto Rico, and we're not there yet.

Can I choose my delivery date?

Yes. You can select your preferred delivery date at checkout. We do not ship on holidays, so please choose an available date accordingly. Once it's with the carrier we can't control the timeline, so pick a date with a little room around it if the night matters.

What is your return policy?

Because caviar is highly perishable, we cannot accept traditional returns or exchanges. However, we are uncompromising about quality. If there is an issue with your order, we will make it right.

Can I change or cancel my order?

No. We cannot change or cancel orders once they are placed, so please double-check your shipping address and selected delivery date at checkout.
